Origin of Laal Maas:

The Mewar King (one of the erstwhile princes of Rajasthan) rejected the dish. Laal Maas was born after the cook raised the heat with Mathania chilies through trial and error.

Two new recipes, Mohan Maas and Jungli Maas were developed exclusively for women during the hunting period. The Jungli Maas recipe is believed to have been created by the House of Samode.
Junglee Maas, Mohan Maas, and Laal Maas have many similarities but are dissimilar. Laal Maas main ingredient is Mathania Chilly, named after a region in Jodhpur.
